VEGETARIANS are those who do not eat the flesh of animals. There are several different kinds of vegetarians:

VEGANS do not eat any animal products, including flesh, milk, and eggs. They generally substitute with vegetable-based versions of these foods, like soymilk and starch-based Egg Replacer.

LACTO-VEGETARIANS consume milk and other dairy products, but do not eat eggs or flesh. Many Hindus follow this type of diet because of their religious beliefs.

OVO-LACTO-VEGETARIANS consume dairy and eggs, but not flesh.

There are also people called “semi-vegetarians” who consume fish and sometimes even chicken. They tend to do so for health reasons, since red meat is particularly high in saturated fat and cholesterol.
