The Farm Vegetarian Cookbook - This is an excellent cookbook for people who are looking for recipes for basic staples of a vegetarian diet (for example, it tells you how to make your own tofu and seitan).
Veganomicon - A new book that is essentially a vegan Joy of Cooking. Delicious basics; easy to understand recipes; and keys included,so that you know right away how much time a recipe will take, if it's gluten- or fat-free, if the ingredients will be found at standard supermarkets, etc. . The Mediterranean Vegan Kitchen - A great source for delicious Spanish, Italian and Greek cuisine. This book only uses authentic ingredients from the region and, therefore, is great for anyone who doesn't like or wants to avoid soy.
How It All Vegan - This is probably the most well-known vegan cookbook out there. A great resource for any new vegans.
