Recipe: Spicy Peanut Noodles
Spicy Peanut Noodles Serves 6
Ingredients
- 8 oz. linguine
- 1/3 cup low-fat creamy peanut butter
- 2 Tbs. low-sodium soy sauce
- 1 1/2 Tbs rice wine vinegar
- 1 to 2 tsp. chile paste
- 1/2 tsp. sugar
- 3/4 cup chopped seeded cucumber
- 3 green onions sliced diagonally into thin pieces
- 2 Tbs. chopped cilantro
- lime wedges, optional
- other toppings of your choice (bell peppers, chopped peanuts, and grated carrot all work well)
Instructions
- Cook linguine according to package.
- Combine peanut butter, 1/4 cup water, soy sauce, vinegar, chile past and sugar in a bowl; whisk until well blended. If sauce is too thick, thin it with water.
- Add linguine and vegetables to the sauce and toss well. Sprinkle with cilantro and, if desired, serve with lime wedges.
- Enjoy!
