Spicy Peanut Noodles


Serves 6

Ingredients


  • 8 oz. linguine
  • 1/3 cup low-fat creamy peanut butter
  • 2 Tbs. low-sodium soy sauce
  • 1 1/2 Tbs rice wine vinegar
  • 1 to 2 tsp. chile paste
  • 1/2 tsp. sugar
  • 3/4 cup chopped seeded cucumber
  • 3 green onions sliced diagonally into thin pieces
  • 2 Tbs. chopped cilantro
  • lime wedges, optional
  • other toppings of your choice (bell peppers, chopped peanuts, and grated carrot all work well)

Instructions


  1. Cook linguine according to package.
  2. Combine peanut butter, 1/4 cup water, soy sauce, vinegar, chile past and sugar in a bowl; whisk until well blended. If sauce is too thick, thin it with water.
  3. Add linguine and vegetables to the sauce and toss well. Sprinkle with cilantro and, if desired, serve with lime wedges.
  4. Enjoy!
