General Tao's Tofu

This recipe is far from healthy, but it is delicious!

Ingredients


  • 1 box firm tofu
  • egg substitute for 1 egg
  • 3/4 cup cornstarch
  • vegetable oil
  • 3 chopped green onions/scallions
  • 1 Tbsp minced garlic
  • 1 Tbsp minced ginger
  • 2/3 cup vegetable stock
  • 2 Tbsp soy sauce
  • 2-4 Tbsp sugar
  • red pepper to taste
  • 1 Tbsp white vinegar
  • 1 Tbsp sherry (optional)
  • steamed broccoli

Directions


  1. Drain, dry and cut tofu into 1 inch chunks (You can freeze the tofu the night before for a more chicken-like consistency.)
  2. Mix the egg replacer as specified on the box and add an additional 3 Tbsp water
  3. Dip tofu in the egg replacer mixture and coat completely
  4. Sprinkle 3/4 cup cornstarch over the tofu and coat completely.
  5. Heat oil in pan and fry tofu pieces until golden. Drain oil.
  6. Heat 3 Tbsp vegetable oil in pan on medium heat.
  7. Add green onions, ginger and garlic and cook for about 2 minutes, being careful not to burn the garlic.
  8. Add vegetable stock, soy sauce, sugar, red pepper, and vinegar.
  9. Mix 2 Tbsp water with 1 Tbsp cornstarch and pour into mixture, stirring well.
  10. Add fried tofu and coat evenly
  11. Serve immediately with broccoli and rice.
