Quick and Delicious Tofu Sammiches
Ingredients: 1 block of tofu, slices of bread (especially sourdough or ciabatta, tamari/soy sauce, peanut (or other vegetable) oil, sesame oil, oregano (or other similar dried spices).
(Also, feel free to vary the spices as you see fit. Almost anything makes it delicious).
Remove tofu from the package and drain. Wrap in paper towels to remove moisture. Cut tofu into small slices, a quarter to a half inch thick. Heat a tablespoon of the peanut oil in a medium sized skillet. Add the tofu. Drizzle sesame oil on to the tofu, and add a drop of tamari into the middle of each piece. Let them cook until the bottom is golden, then flip. Give each piece of tofu a light dusting of oregano and continue to cook. Press them down to remove the moisture. Cook until golden brown.
To serve, lay out on the bread, preferably with slices of tomato and perhaps a bit of mustard. Lettuice also would be good. Enjoy.
